Apple butter

Apples are rich in  polyphenols and are therefore very supportive of the gut barrier and microbiome. I love to make a large batch of this in the Autumn when the apples are abundant in the garden. Great for making muffins, cakes and adding to yogurt and cooked oats for breakfast.

Serves 12


Ingredients:



• 12 apples (Cox, Braeburn, Bramley)

• ½ cup water

• 1 tsp cinnamon



Instructions:


1. Start by peeling and coring your apples, chopping into small pieces, and add to a pan with the water.


2. Bring to the boil, then turn the heat down to a low heat and allow to simmer for 15 minutes. Take off the heat and allow to cool.


3. Transfer to a food processor and process on high until smooth.


4. Transfer to a pan over a low heat and add 1 tsp cinnamon.


5. Keep stirring until the puree thickens to make a butter, around 15-20 minutes.


6. Transfer to an air tight container.


7. Keep in the fridge for 5 days
